As we approach winter and the weather gets colder we all start to crave comfort food. Here at CCM we love healthy, tasty and easy to make recipes and often share them around the office. So we thought, why not share them with you.
Home Made Chicken Goji Berry Soup
So good for a cold day!!!
Ingredients:
- no salt, no pepper, no additives
- 1 large pot
- 1/2 or 1 free range bbq chicken
- 2 heads of broccoli
- 1 leek
- 2 carrots
- 2 zucchini
- 2 large onions
- 1/2 or 1/3 pumpkin
- celery
- 1-2 punnets cherry tomatoes
- ginger (lots!!!!)
- fresh mushrooms (sliced)
- 1 full pack Goji berries (Woolies or Coles have them in the dried fruit section)
Cooking Method
- boil 2 litres of water
- add shredded bbq chicken (no skin and no stuffing)
- chop veges into large chunks as they will end up mashed after boiling…
- add the chopped veges & ginger, bring to boil then turn to slow boil for 1-1 1/2 hrs….
- add mushrooms and goji berries 10-15 minutes before serving….
Can cook large pot and refrigerate…
This is not only very high in anti-oxidants, but it also promotes weight loss.
